The American Dream is the calling to all Americans who are diligent in accomplishing their goals and to prosper their once longing fantasies. This month celebrates National Entrepreneurship, including the recognition of local businesses. In South Florida, there are several local businesses that are thriving, which can often strengthen the community and bring people from the area together. One local business in Miami is Bunnie Cakes, a vegan cupcake bakery located in 2322 NE 2nd Ave. You might have visited Bunnie Cakes before, since it’s only a couple blocks away from iPrep. According to her Bunnie Cakes’ business website, Mariana Cortez is the founder and owner of this wonderful venture. The story behind why Bunnie Cakes started was because one of her 4 children had an intolerance to dairy. According to BunnieCakes.com, in “Our Story”, Ms. Cortez said she had many repeated attempts of trial and error to find a non-dairy birthday cake for her 2 year old son’s birthday. Her grandmother was her inspiration and an excellent baker. She gave her a couple of recipes that Cortez adapted and made them vegan based. She left her corporate job to bake out of her home kitchen. As a result, she discovered different restaurants in Florida that were able to sell her cupcakes. This very day, Bunnie Cakes has a storefront and wholesale settings throughout Miami. Every cupcake is decorated with a tiny heart to represent the love they have for each one of them. Bunnie Cakes also includes donuts, brownies, and cookies. Another successful shop in Miami is Fireman Derek Pies. It is a original pie shop in Miami. According to their business’ site, firemandereks.com, the owners are Derek Kaplan (a former firefighter) and Kimberly Murdock. The reason they created the business was because a firefighter named, Patrick Murdock, sadly died on October 7th, 2013. Patrick and Derek were close mates, based on “How a firefighter’s dying wish helped start one of Miami’s best pie shops” written by the Miami Herald. For years, he had told his wife Kim about a firefighter at the station, Derek Kaplan, who baked delicious pies. Patrick loved the pies so much, he wished if he had money, he would open up a shop. In the end Patrick’s best friend Dereck and his wife opened up a pie shop in loving memory of Patrick, they stated in their website’s “story” section on why they opened the shop. This bakery includes pies, cakes, cheesecakes, cookies, flan, and pot pies. The bakery originally started with key lime pies and expanded. If you want to grab a quick bite, Derek’s pies is located at the center of Wynwood 2818 N Miami Avenue. These local shops are the definition of entrepreneurship and are one of a kind in their own special way. They should be celebrated for their dedication and meaning behind their business.
